Avacado Pesto Pasta
- 1 Zucchinis
- 4 oz Chicken
- 1 Tbsp Coconut Oil
- Avocado Cream Sauce:
- 1/2 Avocado
- 1 Tbsp Extra Virgin Olive Oil
- 1/4 Cup Fresh Basil
- 1/4 Cup Water
- Salt and Pepper to taste
- Heat the coconut oil in a pan on medium heat.
- Once the oil is melted, add in the chicken and cook through.
- Spiralize the zucchinis with a spiralizer or hand peeler.
- Combine all of the Avocado Cream Sauce ingredients in a blender and blend away.
- Once the chicken is done, combine everything in a bowl and mix well so that the Avocado Cream Sauce covers all of the zucchini noodles.
